Like plenty of Bostonians, Dave’s introduction to the hospitality business began by working in various bars and restaurants in and around the greater Boston area. After working in about every role available in the front of the house, Dave seized an opportunity to move into the supply side side of the business, where he spent the next 20+ years Managing the New England region for Maker’s Mark, Sazerac Co, Sidney Frank Importing, and Infinium Spirits, where he kept the city’s finest restaurants flowing with rivers of whiskey.
After cutting his chops behind the bar at the East Coast Grill & Raw Bar, Patrick went on to open the legendary B-Side Lounge in Cambridge. The B-Side provided a crucial spark in the city’s burgeoning cocktail scene. Fielding a murderer’s row of bartenders, the B-Side went on to expand the cocktail scene both locally and nationally.
While serving as Director or Bar Operations for Legal Sea Foods, Patrick once again found himself with the itch of ownership, and soon was back at the helm of yet another important cocktail bar in Cambridge, co-founding the beloved industry haunt Brick & Mortar, LTD. B&M soon cemented itself in the city’s roster of great bars, serving strong drinks and fun times to a willing audience.
